Salmon Patties

1 - 14.75 oz. can salmon
minced onion, up to ½ medium onion
2 eggs, lightly beaten
1 tsp. ground pepper
1 tsp. lemon juice
1/4 cup milk
1 whole pkg. saltine crackers, crushed
Empty salmon & juice into a mixing bowl (remove bones if you like).

Add the rest of the ingredients, mix well.

Form into patties 3/4 to 1 inch thick. Set aside on plate or wax paper (make 5-6 patties).

Let set 5 minutes.

In large frying pan heat 1/8 inch cooking oil to med. high temperature.

When oil is hot place patties in pan and cook 4-5 minutes per side. Make sure patties get cooked all the way through. Center should not be cold.

Patties will be beautifully browned, a little crunchy on the outside!

Taste great as is or served on a bun with tarter sauce.

This mixture can be formed into a loaf and baked as well! Bake at 350 degrees for 45 minutes.
