3 large red potatoes, thinly sliced > about twice the amount of red potatoes as sweet potatoes
1 sweet potato, thinly sliced
1-2 Vidalia onions, sliced
fresh green beans, broken into 1 inch pieces
a sprinkle of rosemary
a sprinkle of thyme
salt and pepper
Preheat grill for high heat.
Generously grease a piece of heavy duty foil or double layers of foil with oil.
Scrub and thinly slice both the unpeeled red potatoes, and peeled sweet potato and spread over the center of the foil.
Sprinkle with the onion slices, beans, herbs, salt and pepper.
Drizzle with oil.
Seal foil, double fold, sealing potatoes tightly.
Grill packet for 30 to 40 minutes, turning once or twice, until potatoes are tender.
