From the kitchen of Susan Dyer
1 can of black beans, rinsed and drained
1 can of corn, drained - Summer Crisp, bi-color, super sweet
Any chopped veggies you want to add, diced
Green, red and yellow pepper
grape tomatoes, halved
The point is a colorful mix of your favorite veggies, more is better.
Pour on about 2/3 bottle of Italian dressing (if you want to be adventurous, use balsamic vinaigrette) Mix together and voila!
Chill completely before serving.
Susan mixed this up in a bright yellow bowl, it was simple and gorgeous!
