2 cans sliced water chestnuts, drained and chopped
1 small red onion, finely chopped
Marinate overnight in:
¼ cup cider vinegar
¼ cup oil
1/3 cup sugar
Drain water chestnuts and onion and mix with
2 cans LeSeur peas, drained
½ cup chopped pecans
¼ cup mayonnaise (just enough to hold it together)
Mix and chill before serving. Best if made the day before serving.
- May add a little chopped pimento or shredded carrot for color.
- May add a bit of shredded cheddar cheese or cheese crumbles.
