From Benita Long’s new "Come to the Table"
2 pounds new red potatoes (about 6 cups sliced)
2 pounds sweet onions (about 6 cups sliced)
8 Tblsp. butter (1 stick, cut into small pieces)
Nature’s Season Salt (mix of garlic, salt, pepper and seasonings)
2 cups shredded Swiss cheese
Preheat oven to 350 degrees.
Thinly slice onions and potatoes using a food processor or by hand.
In a lightly greased 3 quart casserole, layer ½ the potatoes, ½ the onions, and dot with ½ the butter. Sprinkle with season salt. Repeat the layers, and top with Swiss cheese.
Cover and bake for 30 minutes.
Uncover and bake for 30 minutes more, until browned and bubbly.
Test the center with a knife to make sure the potatoes are tender.
Enjoy! This beautiful side dish serves 12.
