Apple-Carrot Quick Bread

From the kitchen of Joyce Same

1½ cups (2 medium), shredded apples
½ cup shredded carrot
¼ cup butter or margarine
2/3 cup sugar
½ tsp. lemon extract
2 eggs
1 ¾ cups flour
1 tsp. baking powder
1 tsp. soda
½ tsp. salt
½ cup coconut (or chopped nuts)

Heat oven to 350 degrees.
Grease bottom of 9 x 5 or 8 x 4 inch loaf pan. Line bottom with waxed paper.

With mixer, blend first 6 ingredients.

Add remaining dry ingredients. Blend well.

Pour into prepared pan.

Bake 45-55 minutes or until toothpick inserted into center comes out clean. Remove from pan to cool. Makes one loaf.

Or make it into muffins! Really moist muffins, baked into quick and healthy snacks, in ½ the time.
