1 egg, beaten
1 cup skim milk
1/4 cup oil
½ cup raisins
1 finely chopped apple (with or w/out the skin)
1 cup flour (may use ½ whole wheat)
1 cup oatmeal, uncooked
1/4 cup brown sugar
3 tsp. baking powder
1 tsp. salt
2 tsp. cinnamon
Beat egg; add all other ingredients mixing just until moistened.
Grease muffin pan, or line with foil liners.
Spoon batter into cups, filling 3/4 full.
Bake at 325 degrees for 20-25 minutes or until done to the touch.
Makes one dozen muffins.
- For Breakfast, with soups, for snacks, these are quick and great!
- Do be brave and try craisins (dried cranberries) for a tangy touch.
- I’ll add some chopped walnuts the next time.
