1 8oz. pkg. spinach or veggie pasta
4 Tblsp. olive oil
4 Tblsp. butter
1 cup chopped onion
1 tsp. minced garlic
4 chicken breasts, sliced or cubed
½ lb. or 2 cups zucchini, cut into 1" cubed
4 cups cherry or grape tomatoes
1 tsp. salt
1/8 tsp. pepper
½ - 1 tsp. basil
½ - 1 tsp. oregano
¾ cup mild, shredded cheese, mozzarella, parmesan, Monterey jack
2 Tblsp. fresh chopped parsley
While pasta is cooking, heat oil and butter in a large skillet.
Add onion and garlic, cook to soften.
Add chicken to skillet. Cook until juices run clear, pink is gone, about 5 minutes.
Add zucchini and seasonings. Cook 5 minutes and add tomatoes, cook until hot.
Gently toss with drained noodles and shredded cheese. Sprinkle with parsley.
