From the kitchen of Dianne Simpson
1 lb. bulk sausage (I used Sage flavor)
½ cup onion, chopped
1 small red bell pepper, chopped
1 small green bell pepper, chopped
- Brown sausage and chopped vegetables, drain.
¼ cup grated parmesan cheese
½ cup shredded colby/jack cheese
1 egg, beaten
½ tsp. salt
½ tsp. pepper
½ tsp. garlic power
- Add cheeses, egg and seasonings to browned meat.
2 cups biscuit mix (Bisquick)
¾ cup milk
¼ cup sour cream
- Make a batter with biscuit mix, milk and sour cream.
Gently stir sausage mixture into batter and pour into greased 8 X 9 inch baking dish.
Bake at 350° for 45 minutes.
Cut into squares and serve with eggs, and fresh veggies or fruit on theo side.
Notes:
* May be frozen after baking.
** This is a mild version of the original recipe which called for hot sausage, ½ cup grated jalapeno flavored cheese, and ¼ tsp. Tabasco sauce.
