From the kitchen of The Family's Kathy Schmidt
1 large sweet onion, peeled, cut into 1/4 inch slices, and separated into rings
1/2 cup plus 1 Tblsp. flour
3/4 cup milk
Mix milk and flour until smooth, and thick enough to coat and stick well to the onion slice
Dip and coat rings with batter. Shake off excess.
Dip rings in finely crushed saltine cracker crumbs. (About one tube of crackers per onion)
Deep fry in hot oil until golden brown, turning once.
Drain on paper towel.
Salt and serve!
* Can be made the night before!
* Cover with plastic wrap and store raw in the fridge until ready to fry.
* Crush crackers using your blender.
