Firecracker Burgers

1 pound ground chuck
1 -4 ounce can diced green chilies, drained
1/4 cup finely chopped sweet onion

Shape into patties and grill to desired doneness.

Top each with your favorite cheese - Cheddar, Monterey Jack or Pepper Jack

Serve on toasted Kaiser rolls or hamburger buns, topped with bright red, yellow and orange bell peppers, sliced into rings; lettuce, tomato . . . and consider salsa, or maybe ranch dressing, instead of catsup for a little extra kick!

Firecracker Burgers with Cooling Lime Sauce
From the Texas Beef Council

1 ½ lbs. ground chuck
1 Tblsp. curry powder
1 Tblsp. Caribbean jerk seasoning
1 tsp. salt

Combine ground chuck and seasonings, mixing lightly but thoroughly. Shape
into four patties and grill over medium, ash-covered coals to desired doneness.

1/2 cup mayonnaise
1/4 cup plain yogurt
1 Tblsp. fresh lime juice
2 tsp. grated lime peel
1/4 tsp. salt

Spread sauce on cut sides of 4 sesame seed sandwich rolls that have been toasted.
Place a burger on bottom half of each roll; top with mixed greens. ENJOY!
