Mix with a pastry blender until course crumbs form:
1 1/3 cups flour
½ cup finely ground almonds
1/3 cup sugar
1 tsp. grated lemon rind
1/4 tsp. salt
6 Tblsp. cold butter, cut into pieces
1 tsp. vanilla
Add egg to flour and butter mixture and mix until soft dough ball forms. Wrap in plastic wrap and chill for an hour or overnight.
Preheat oven to 350 degrees.
On a greased and floured baking sheet or pizza pan, or on your favorite baking stone.
Pat dough into a 10 inch circle, forming a bit of an edge all around.
Prick all over with a fork. Bake 25 minutes, until golden.
3/4 cup seedless jam with
1 tsp. lemon juice
Heat until melted and spreadable.
Spread ½ cup jam over crust.
Arrange 2 pints Blueberries, Red Raspberries, Strawberries - or a mixture of them over prepared crust. Drizzle or brush remaining jam over the berries.
Serve with whipped cream.
Notes: Add a yummy cream cheese layer by mixing an 8 ounce package of softened cream cheese with 1/3 cup of powdered sugar and 1/2 tsp. vanilla or almond extract.
Spread this mixture in the bottom of the pastry shell before putting on the jam and berries!
