All of the white meat from a deli rotisserie chicken, no skin, shredded
1 pkg. whole wheat flatbread or 6 pita pocket halves
Sauce: (Make this first and I double it!)
½ cup plain, Greek yogurt
½ cup finely chopped cucumber (peeled, seeded)
¼ cup light sour cream
1 tsp. jarred minced garlic in oil
2 tsp. lemon juice
1 tsp. dried dill
salt and pepper
1/4 cup olive oil
2 Tblsp. lemon juice
2 tsp. jarred minced garlic in oil
1 tsp. dried oregano
1/2 tsp. ground cumin
1/2 tsp. onion powder
You’ll also need:
tomato, diced or sliced in thin wedges
red onion, sliced thin
In a small bowl, mix sauce ingredients, set aside in the refrigerator.
In a non-stick skillet, combine marinade ingredients.
Add chicken and brown lightly.
Heat bread in microwave. Top bread or fill pockets with chicken, sauce, lettuce, tomato, cucumber slices and onion. It’s good!
