1 pint fresh strawberries, stemmed and diced
1 Granny Smith apple, diced
1 ripe pear, diced
1 kiwi, peeled and diced
¼ cup sugar
¼ cup lemon juice
½ tsp. ground cinnamon
¼ tsp. nutmeg
1 pkg. flour tortillas
butter flavored Pam or melted butter
Chop fresh fruit into a pretty bowl.
Mix lemon juice, sugar, cinnamon and nutmeg.
Pour lemon mixture over fruit and mix well.
Serve with fresh cinnamon chips.
Preheat oven to 350 degrees.
In a small bowl combine sugar and cinnamon.
Arrange 4 tortillas on a large baking sheet.
Spritz tortillas with Pam or brush with melted butter.
Sprinkle with cinnamon /sugar mixture.
Use a pizza cutter to cut each tortilla in 8 triangles.
Bake 15 minutes or until crisp.
Repeat – to make many chips as needed.
~ I tried the fat free tortillas, weren’t as good as the real deal in this recipe.
~ Can’t find a ripe pear or kiwi? I used some fresh pineapple, raspberries would be good - just make sure you have a mix of color, sweet, tangy, crunchy . . . Dressing mixture covered about 5 cups of fruit total as made per this recipe.
~ It’s tasty without the chips and I think would be a good topping for grilled fish or chicken too.
