A pulled chicken sandwich filling in a very light, tangy sauce.
6 boneless, skinless chicken breast halves, 2.5 lbs.
1/2 cup onion chopped
1 cup ketchup
1 Tblsp. Worcestershire sauce
1 Tblsp. apple cider vinegar
1 Tblsp.soy sauce
2 Tblsp. brown sugar
1/2 tsp. garlic powder
Combine all ingredients in a crockpot, except the chicken.
Add chicken and toss to coat.
Cover and cook on high for 4 hours.
Shred chicken, stir into sauce and let cook another hour.
Turn to low until time to serve.
Serve on potato or Kaiser rolls, whole grain buns or over rice.
This would be good for a stacked dinner, white rice, shredded chicken, pineapple tidbits, steamed broccoli, a sprinkle of cashews or peanuts.
