½ cup honey
1/3 cup soy sauce
¼ cup lime juice
4 boneless chicken breasts
In a zip-lock bag or pyrex dish, combine honey, soy sauce and lime juice.
Add chicken and turn to coat.
Seal or cover and refrigerate 30-45 minutes.
Drain and discard marinade.
Grill chicken, uncovered, over medium heat for 6-7 minutes on each
side or until juices run clear. Don't overcook.
- I've found the secret to tender, juicy grilled chicken is to pound it out, ever so slightly, just to even out the thickness, so we don't have dry "thin' edges.
- This is seriously good grilled chicken, but the flavor is light. So it's perfect "in' recipes: chilled and sliced over salads - especially Mexican flavored salads, or as the star ingredient in hot or cold in wraps. LEFTOVERS!
