4 cod fillets
Hellman’s Mayonnaise, about ¼ cup
1/2 cup Italian bread crumbs
1 Tblsp. dried parsley
sea salt and pepper
3 Tblsp. butter, melted
Thaw fish if needed, drain well and pat dry.
Prepare a 9 X 13 inch glass baking dish by spreading a bit of olive oil over the bottom.
On a plate, combine bread crumbs and parsley.
Spread fillets evenly with mayo. I didn’t even measure; I squirted a bit of mayo on each fillet and rubbed it all over each one, top and bottom.
Roll each fillet in bread crumbs until completely coated and arrange in the dish.
Season with a light sprinkle of salt and pepper. Drizzle with butter.
Bake at 425 degrees for 15 to 20 minutes, depending on thickness of fillets.
I finished it off with a minute under the broiler, just to crisp the crumbs.
