From the kitchen of Dawn Timmers
2/3 cup white popcorn
2 Tblsp. canola oil
1 cup white sugar
½ cup light corn syrup
½ cup honey
1 cup peanut butter
1 tsp. vanilla
Pop popcorn in oil and put in large bowl.
In large, heavy bottomed saucepan, stir rest of ingredients over medium heat until thoroughly mixed. Pour over popcorn and stir until popcorn is evenly coated.
Spread popcorn on waxed paper to cool.
Break into chunks and store in airtight container.
Kathy Schmidt’s version omits the vanilla, uses all corn syrup, and air popped popcorn, still YUMMY!
She says you can also use the microwave for peanut butter mixture. Mix sugar with clear syrup, microwave for 3 minutes or until bubbling. Add peanut butter to hot mixture and mix well.
