Tuna Mandarin Roll-ups
1 -12 oz. can light tuna in water, drained
1/4 cup low or fat-free mayonnaise or Miracle Whip
1/4 teaspoon curry powder, optional
1 - 11 oz. can mandarin orange segments, drained
1/3 cup finely chopped, canned water chestnuts, drained
4 - 6-inch flour tortillas - choose interesting flavors and colors!
2 cups loosely packed, torn lettuce or baby spinach leaves
In a medium bowl, mix tuna, mayonnaise and curry powder with a fork. Gently, stir in oranges and water chestnuts.
Spread 1/2 cup tuna mixture onto each tortilla to within 1 inch of the edge; top with 1/2 cup lettuce. Roll up and serve immediately. Serves 4.
- This recipe is great with leftover chopped turkey or chicken too!
- Serve as a salad, on a bed of fresh greens or spinachor stuffed in a tomato!
