Peach Puff Pancake

From the kitchen of Peg udovina
The Great Oak Inn

¼ cup softened butter
1 lb. sliced peaches (~2 cups)
¾ cup sugar divided

2 tsp. baking powder
1½ cups flour
2 eggs
1¼ cup milk or cream

Preheat oven to 375 degrees.
Put butter into a 2 or 3 quart casserole dish and place in a warm oven. Toss the sliced peaches with 1/4 cup sugar.
Place remaining 1/2 cup sugar, flour, milk, eggs and baking powder into a bowl and mix well.
When the butter has melted to a sizzling point after 3-5 minutes, remove the hot dish from the oven.
Immediately pour batter into the dish and spoon sugared fruit on top.
Bake 50 minutes.
Serve warm with peach slices and cream of choice.

Peg writes: Here at The Great Oak Inn, I pick the peaches fresh that morning, when they're ripe, and it doesn't get any better than that! Sometimes, young families from church come over and pick. It's great to see the two year olds with peach smiles from ear to ear. I don't use pesticides on these trees just for these pictures. The trees have also become an outreach as the pickers and I usually pick enough to share and I share with neighbors too.
