Cannelloni Magnifique

(Beef and Spinach Manicotti)

For filling, Mix:
1 pound ground beef, browned and drained
10 ounces spinach, chopped and cooked (or 10 ounces frozen spinach, thawed and drained)
1 cup shredded Mozzarella cheese
1/3 cup Parmesan cheese
2 eggs, slightly beaten
½ tsp. oregano
1/4 tsp. pepper

For filling, in a saucepan, mix:
1 16 ounce can tomatoes, stewed, crushed or diced all work
1 6 ounce can tomato paste
1 cup water
½ cup chopped onion
½ tsp. oregano
½ tsp. salt
1/4 tsp. garlic powder
Simmer sauce for 10 minutes.

Prepare 12 large manicotti noodles according to package directions.
Fill noodles with beef/spinach mixture and arrange in a 9 X 13 inch pan or baking dish.
Pour sauce over filled noodles and cover with foil.
Bake at 350 degrees for 40 minutes.
Uncover, and top with 1 more cup of shredded Mozzarella cheese.
Bake 10-15 minutes longer, until cheese melts.

*Notes:
-My kids really eat this...
-Makes a great way to hide dark, green leafy vegetables!
-Easily made a day ahead. Cover with foil and store in fridge until ready to bake.
