Cherry Chicken Salad Sandwiches
3 boneless chicken breast halves, cooked, diced
1/3 cup dried cherries
1/3 cup diced celery
1/3 cup chopped pecans, toasted
1/3 cup favorite low-fat mayo (I’m a Miracle Whip!)
1 tablespoon milk
salt and pepper to taste
1 chopped Granny Smith apple
Combine chicken, dried cherries, celery, nuts, mayonnaise, milk, salt, pepper and apple. Toss together and refrigerate until chilled. Make sandwiches of good whole grain bread or croissants.
Perfect on croissants or small buns for an informal Easter Bruch buffet, a baby or bridal shower, or a make-ahead lunch treat.
