Confetti Chicken Salad
3 pounds of boneless, skinless chicken breasts, cooked and cubed
½ 12 oz. bag of broccoli slaw with shredded carrot
20 oz. can pineapple tidbits, drained
15 oz. can mandarin orange sections, drained
½ large or 1 small red pepper, diced
4 Tblsp. Honey MUSTARD, not the salad dressing
Lite Miracle Whip, enough to hold the salad together
Salt and pepper to taste
Chill completely to let flavors meld.
Serve on bed of fresh spinach leaves, in a fresh tomato blossom, in a wrap, a pita pocket, or on a flaky croissant.
