Cherry Pork Loin

Pork Loin roast, whole boneless loin is perfect!
Lay roast, fat side up, in a roaster or pyrex baking dish.
Season with salt, pepper, and thyme to taste
Bake uncovered, at 325 degrees, for a total of 2 ½ hours, or until meat thermometer registers 170 degrees.
*Sauce is added for the last ½ hour of bake time.

In a saucepan, combine:
1 cup whole or chopped cherry preserves
½ cup of Sweet Bing cherries in heavy sauce
¼ cup red wine vinegar
2 Tblsp. light corn syrup
¼ tsp. ground cinnamon
¼ tsp. ground nutmeg
¼ tsp. ground cloves

Heat to a boil and simmer for 2 minutes.
Spoon over roast for the last 30 minutes it is cooking in the oven.
Baste several times.

-Sauce may be simmered for 20 minutes and simply served on the side.
