Chicken Bruschetta

Mix:
1 tsp. garlic powder
½ tsp. salt
¼ tsp. black pepper

Sprinkle over:
4 chicken breast halves

Grill or broil seasoned chicken, keep warm.

In a large skillet, over med-high heat, heat:
1 Tblsp. olive oil

Add:
1 (8-ounce) package mushrooms, sliced ( I like the baby portabellas)
1 small zucchini, sliced
½ cup red onion, chopped
4 garlic cloves, minced
1/4 tsp. salt
1/8 tsp. black pepper

Saute for two minutes and add:
1 cup plum tomato, chopped
½ cup fresh basil, torn or snipped
4 tsp. balsamic vinegar

Saute all veggies for three minutes longer, until tender and heated through.

Spoon veggies over the chicken and serve with a sprinkle of fresh grated Parmesan cheeseover your favorite pasta ~
