Sesame Spinach Salad
2 10 ounce packages fresh baby spinach, rinsed and dried
1 pint grape or cherry tomatoes, halved if you wish
2 ripe avocados, peeled and sliced
1 5 ounce package frozen, cooked salad shrimp
3/4 pound fresh mushrooms, sliced
3 hard-cooked eggs, chopped
½ cup sesame seeds, toasted
1/4 cup shredded parmesan cheese
Add your favorite salad dressing and a few friends, serves up to 10 as a meal, 20 as a side!
- To toast sesame seeds: In a non-stick sauté’ pan, heat the sesame seeds over medium heat, shaking the pan occasionally until golden brown.
- Best if you use real shredded cheese instead of the bottled. In the stores, you’ll find it with the cheeses or next to the fresh pastas.
- Do use this as a place to start and feel free to change it up and make it your own!
