Vidalia Onion Pie

1 ½ cups crushed Ritz crackers
4 Tblsp. melted butter
Mix crackers and butter together.
Press firmly into bottom and up the sides of a 9” pie pan.
Let crust firm up while you sauté’ the onions.

2 Tblsp. butter
2 cups sliced sweet onions
1 clove garlic, minced
Sauté onions and garlic until softened ~10-12 minutes.
Spoon evenly over bottom of cracker crust.

¾ cup milk
2 beaten eggs
Mix and pour over onions.

Top with ¾ cup grated cheese (Cheddar’s yummy. ¼ cup Parmesan?)

Bake at 350 for 30-40 minutes, until golden and knife inserted in center comes out clean.

Serves 8

Good served as a side to anything, but especially tasty with grilled meats or a steak. Add a fresh salad and iced tea ~ summer is here!

Terri’s notes: Because I’m always stirring something up…I’ve done a little recipe search and discovered that some Gourmet Goddesses have added a sprinkle of chopped chives, parsley, or crumbled bacon for added flair and flavor!
