Potato Pancakes II

From the kitchen of Dawn Timmers

3 medium potatoes – peeled and grated
1 Tblsp. lemon juice, tossed with potatoes to keep them from browning
¼ cup melted butter
2 tablespoons all-purpose flour
¼ cup finely chopped onion
1 Tblsp. thinly sliced green onions
1 large egg, beaten
¼ tsp. baking powder
½ teaspoon salt, ¼ tsp. pepper
1 Tblsp. each oil and butter as needed to fry each batch

Drain/press excess moisture (and lemon juice) off of potatoes.
Add other ingredients and stir to mix well.
In a heavy-bottomed skillet over medium-high heat, heat the oil until hot. Place spoonfuls of potato mixture into hot oil, lightly using fork to spread out to 1/4 to 1/2 inch thick patties.
Brown on one side, turn and brown on the other, ~3 minutes on each side.
Let drain on paper towels.
Keep warm and serve hot with applesauce or sour cream!
