2 avocados, peeled and chopped
1 pint cherry tomatoes, quartered or grape tomatoes, halved
1 cup frozen corn, thawed
3 tablespoons chopped green chilies, drained
1 bunch green onions , thinly sliced
3 tablespoons lime juice
1 teaspoon sugar
Salt and pepper to taste
Serve with chips.
- Healthy complement to any meal, snack for during or after “the game”, and a great way to get the kids to stop for a little chat and after school snack!
- Have fun with the chips, there are so many choices now.
- The small can of Mexi-corn or bi-color super sweet corn, canned or frozen is my favorite.
- If you have fresh tomatoes, about 1 ½ cups chopped tomatoes is good. (drain some of the juice off)
