1 lb. ground beef (or ½ beef and ½ ground pork)
1/2 cup cracker crumbs, dry bread crumbs or oatmeal
1/3 cup finely chopped onion
1 beaten egg
1 tsp. salt and black pepper to taste
1/4 cup milk
1 Tblsp. cornstarch (or 2 Tblsp. flour)
1/2 cup brown sugar
20 oz. can pineapple tidbits, drained, reserve juice
1/3 cup vinegar
1 Tblsp. soy sauce
1/4 tsp. ground ginger (1 tsp. grated fresh)
1/2 chopped green pepper
1/2 chopped red pepper
Combine meat, crumbs, onion, egg, salt, pepper and milk. Make into 1½ balls. Brown meatballs in a skillet - or bake, a single layer, in a 350 degree oven for 20-25 minutes or until meatballs are done. Drain off fat.
For sauce: Mix cornstarch or flour with sugar, stir in pineapple juice, vinegar, soy sauce and ginger until smooth. Cook, stirring constantly until bubbly and thick. Pour sauce over meatballs, pineapple and peppers, gently stir together and simmer for about 5 minutes or put back in the oven to heat through, about 10 minutes.
Serve over rice or noodles. Makes 4 servings.
OR this makes a great party appetizer! Pour prepared sauce, meatballs, pineapple, and peppers into a crockpot, heat through on high. Turn to low to keep warm, and serve with toothpicks.
Note: Make your own meatballs with this recipe or use a bag of pre-cooked, frozen meatballs prepared according to package directions.
