Father Don's Blue Cheese Crackers

12 ounces blue cheese, crumbled
4 ounces butter, softened
1 ½ cups all-purpose flour
2 tablespoons water
1 egg, beaten
½ cup walnuts, chopped

Combine cheese, butter, flour and water into a soft dough.  If mixture is too sticky, add a little more flour; if too crumbly, add water.

Roll dough into two logs about 1 ½ inches in diameter.  Brush logs with beaten eggs and roll in chopped walnuts.  Wrap in plastic and refrigerate at least one hour.

Heat oven to 350 F.

Unwrap logs, slice 1/3 inch thick.  Bake on parchment paper lined cookie sheet for 20 minutes or until lightly browned.  Serve warm or cold.
