Hot Fudge Pudding Cake

from the kitchen of Delana Romenesko

1 cup flour
¾ cup sugar
2 Tblsp. cocoa
2 tsp. baking powder
¼ tsp. salt
½ cup milk
2 Tblsp. butter, melted

Mix dry ingredients, add milk and butter. Mix.
Pour into a 9x9 inch pan or baking dish.

¼ cup cocoa
1 cup brown sugar
Sprinkle on top of the batter.

Pour 1¾ cups hot water over the top. Bake at 350 degrees for 45 min.

Serve warm with ice cream.

Terri's notes:
~ This is so easy, inexpensive and tasty!
~ Mix it up and pop it in the oven just before serving dinner. Dessert will be ready when you are!
~ For Chocolate lovers - I kicked it up a notch and sprinkled 1/4 cup semi-sweet chocolate chips over the batter before I sprinkled on the cocoa/br. sugar mixture. ~I'd like to test it with some instant coffee crystals mixed into the hot water or a bit of brewed coffee used in place of some of the water - What do you think?
