Baked Brie with Caramelized Onions and Cherries



8 oz. round of Brie cheese
1 sweet onion, chopped
2 Tblsp. butter
1/3 cup brown sugar
1/2 cup dried cherries
2 tsp. balsamic vinegar
1/2 cup pistachios

Place Brie on a baking sheet and bake in a 350 degree oven for about 10-15 minutes, until Brie is soft and warmed through.

In a small skillet, melt butter and sauté onions. Add sugar, cherries and vinegar, stir and heat until onions begin to turn a golden brown and caramelize.

Plate the warm Brie, and top with onion mixture. Sprinkle pistachios along the side of the plate.
Add a knife and crackers. Guests will happily serve themselves.
