Mexican Meatball Soup

Albondigas (al bon dee gauze), a savory meatball and vegetable soup.

Mix for Meatballs
1 pound lean ground beef
2 cloves garlic, minced 1 onion, minced
1 slice bread, crumbled
1 egg
2 tablespoons water

Mix it up, shape into meatballs.

Heat 4 cups water.
Dissolve 2 cubes beef bouillon in water.

Bring to a boil, drop in the meatballs, and cook for 5 minutes.

Add:
1 1 /2 teaspoon chili powder
1/2 teaspoon dried oregano
1 1 /2 teaspoon ground cumin
3 carrots, sliced
1 green bell pepper, chopped
2 stalks celery, chopped
1 (14.5 ounce) can stewed tomatoes with liquid
3-4 potatoes, cubed (optional)
salt and pepper to taste

Simmer soup for 30 to 45 minutes.
Serve in bowls, with salt, pepper and hot sauce to taste.
