♦ In a small bowl, combine the butter, garlic, lime zest, lime juice and a pinch of salt.
♦ Spread Lime Butter evenly over cut side of both top and bottom of buns, set aside.
♦ In another bowl, combine the paprika, cumin and chipotle powder with kosher salt.
♦ Sprinkle and rub spice mixture all over burgers.
♦ Grill burgers over moderately high heat, turning once, until done to your taste.
♦ Grill or broil buns, the cut/buttered side up, until golden and toasted.
♦ Top with burgers and serve with all your favorite toppings.

~ The original recipe called for 4 12 oz. boneless rib eye steaks, 1 inch thick. We tested this recipe with the Rib-eyes, New York Strips and THEN, we decided the burgers needed to be a recipe all their own. You don’t have to eat steak to enjoy the good life!
~ The leaner the meat, the easier it is to over-cook. I’m a fan of the 85/15 for grilling.
